Rice cooker mushroom rice
Put rinsed short-grain rice, soy sauce, and water in the cooker, then layer the mushrooms on top. Run the permitted mixed-rice cycle, rest for 10 minutes, and fold together. Plan on about an hour in total.

Ingredients
Use the listed quantities. Rice-cooker cups are 180 ml; spoon measurements are standard measuring spoons.
Method
- Rinse the rice gently in a sieve until the water is less cloudy. Drain well, then transfer to the inner pot. Check that this quantity is within your cooker’s mixed-rice capacity.
- Add soy sauce and ginger first, then water to the 2-cup white-rice line. Stir the rice level. The sauce counts toward the liquid; do not fill with water and then add sauce.
- Spread mushrooms and carrot evenly on top without stirring them into the rice. Close the lid and select the mixed-rice program, or the white-rice program if your manual permits it. Allow approximately 35–50 minutes, depending on the machine.
- When the cycle ends, leave the lid closed for 10 minutes. Taste a grain. If still firm, add 1–2 tablespoons hot water and finish using the cooker’s permitted reheating or cooking method.
- Fold the vegetables through with a rice paddle. Add sesame oil, scallions, and optional sesame seeds. Taste before adding more soy sauce. Serve promptly.

Cooking notes & substitutions
Let sliced mushrooms steam on top of the rice, then fold them through after cooking. This keeps the grains in contact with the cooking liquid and gives you a savory bowl without a separate pan. Serve it alongside tofu or a quick plate of greens. Use a cooker whose manual permits mixed rice; small travel cookers may not have enough headroom.
Avoid soggy rice
Fresh mushrooms release moisture. Keep the amount near 150 g; doubling the vegetables without adjusting the recipe can make the rice wet.
No measuring lines?
Use the manufacturer’s white-rice ratio for 300 g of rice, counting the soy sauce in the total liquid. A universal rice-to-water ratio does not suit every cooker.
Substitutions
Tamari can replace soy sauce; check the label if you need gluten-free food. Use fresh shiitake or cremini, rather than adding dry mushrooms without soaking.

Questions before you cook
Can I use brown rice?
Not on the white-rice cycle. Brown rice needs a different liquid level and longer cooking; use the brown-rice recipe instead.
Do I need to sauté the mushrooms first?
No. This method steams a measured amount of fresh sliced mushrooms above the rice. It gives a softer mushroom texture than pan-browning, with no second pan to wash.
Can I use dried mushrooms?
This version is written for fresh mushrooms. Dried mushrooms absorb water and need rehydration; do not swap them by weight or add them dry to the pot. Use fresh shiitake or cremini for the closest substitution.
What if the rice is wet when the cycle ends?
Let it complete the closed-lid rest before judging it. Fold gently rather than mashing. Next time, drain the rinsed rice well, count soy sauce within the liquid, and keep the vegetables to the listed quantities.
Leftovers & food safety
Refrigerate leftovers promptly in shallow containers. Do not leave cooked food at room temperature for more than 2 hours, or 1 hour above 90°F / 32°C. Reheat leftovers to 165°F / 74°C. Follow package instructions and use a thermometer where appropriate. USDA leftover guidance.
