Ingredients
Use the listed quantities. Rice-cooker cups are 180 ml; spoon measurements are standard measuring spoons.
Method
- Press the tofu gently between clean towels for 15 minutes. Cut into 2 cm cubes and pat the cut faces dry. Preheat the air fryer to 200°C / 390°F if the manufacturer recommends preheating.
- Toss tofu with neutral oil, salt, and garlic powder. Sprinkle cornstarch over it and turn gently until there are no thick white clumps.
- Arrange cubes in one layer with small gaps. If they do not fit, cook in two batches; overlapping pieces will steam. Air fry for 12–16 minutes, shaking carefully at about 7 minutes.
- Check for a dry, golden exterior. Add 2 minutes if necessary, watching closely. Mix soy sauce, rice vinegar, and sesame oil in a separate bowl.
- Toss the hot tofu lightly with the sauce just before eating, then add scallion and sesame seeds. For maximum crispness, serve the sauce on the side instead.

Cooking notes & substitutions
For crisp edges, remove surface moisture and add sauce after air frying. Extra-firm tofu is easier to handle than softer varieties. This version uses a light soy-sesame finish so the crust keeps some texture; a thick sweet glaze is optional, not essential.

Use extra-firm or super-firm. Silken tofu will break during tossing and needs a different method.
Cornstarch alternative
Potato starch works as a light coating. Avoid using large amounts; the surface can become powdery.
Reheating
Re-crisp refrigerated tofu in the air fryer at 180°C / 355°F for a few minutes. Add fresh sauce after reheating.

Use this crisp tofu base for three different bowls. For a sesame rice bowl, add the soy-sesame finish and serve with edamame rice. For a tangy noodle bowl, keep the tofu dry and put the sauce on the noodles. For a spicy plate, add a little chili crisp after cooking. These are serving variations of one method, so you do not need a new cooking time for each sauce.

Questions before you cook
Why is my tofu soft?
Usually it is too wet, crowded, or heavily sauced. Dry it well, leave gaps, and add sauce at the end.
Can I skip pressing the tofu?
If using dense, vacuum-packed super-firm tofu, draining and drying may be enough. Water-packed extra-firm tofu benefits from the 15-minute press in this recipe. Dry the cut surfaces too.
Can I make it without cornstarch?
Yes, but expect a less distinct crust. Keep the oil coating light and check the tofu early. Potato starch is the closest suggested coating substitution.
Can I double the recipe?
Use two batches if the cubes cannot lie in one layer with gaps. Doubling the pile does not mean doubling the timer. Sauce only the portion you are about to eat.
Leftovers & food safety
Refrigerate leftovers promptly in shallow containers. Do not leave cooked food at room temperature for more than 2 hours, or 1 hour above 90°F / 32°C. Reheat leftovers to 165°F / 74°C. Follow package instructions and use a thermometer where appropriate. USDA leftover guidance.
