Ingredients

Use the listed quantities. Rice-cooker cups are 180 ml; spoon measurements are standard measuring spoons.

Method

  1. Scrub or peel the sweet potato. Cut into approximately 1.5 cm cubes, keeping the size as even as possible. Pat dry.
  2. Toss cubes with neutral oil, salt, and ground ginger. Preheat the air fryer to 190°C / 375°F if recommended.
  3. Spread in one layer with room for air to move. Cook for 14–20 minutes, shaking the basket after 7 minutes.
  4. Test one of the largest cubes with a fork. It should be tender through the center. Continue in 2-minute intervals if needed, watching the edges.
  5. Transfer to a bowl and toss with soy sauce, sesame oil, and sesame seeds. Serve warm.

Cooking notes & substitutions

Small, even cubes give you a tender middle without a long cooking time. Sweet potatoes brown naturally, so there is no need to add sugar before air frying. Use them in a rice bowl with edamame or serve beside greens.

Different sweet potatoes

Dense Japanese sweet potatoes may need longer and will have a drier texture than orange-fleshed varieties.

More than two servings

Use batches. A deep pile cooks unevenly, even if the appliance’s advertised capacity sounds large enough.

Avoid a sticky basket

Add sweet sauces after cooking. Sugar in a glaze can burn before the potato center becomes tender.

Questions before you cook

Should I soak the cubes?

This method does not require soaking. Dry surfaces and enough space in the basket matter more for the intended browned edges.

Leftovers & food safety

Refrigerate leftovers promptly in shallow containers. Do not leave cooked food at room temperature for more than 2 hours, or 1 hour above 90°F / 32°C. Reheat leftovers to 165°F / 74°C. Follow package instructions and use a thermometer where appropriate. USDA leftover guidance.
