Air fryer mushrooms with ginger and soy

Ingredients

Use the listed quantities. Rice-cooker cups are 180 ml; spoon measurements are standard measuring spoons.

Method

  1. Wipe the mushrooms clean or rinse quickly and dry thoroughly. Trim off tough stems. Halve large caps and leave small caps whole.
  2. Toss with neutral oil. Preheat to 190°C / 375°F if recommended, then spread the mushrooms loosely in the basket.
  3. Air fry for 7–10 minutes, shaking halfway, until cooked through and lightly browned at the edges. Small pieces may finish early.
  4. Mix soy sauce, vinegar, ginger, and sesame oil. Toss the cooked mushrooms in the mixture. If a hotter finish is preferred, return them to the fryer for 1 minute.
  5. Scatter with scallion and spoon over rice or noodles. Include any dressing from the bowl.

Cooking notes & substitutions

Air frying concentrates mushroom flavor, but the pieces shrink substantially. Keep fresh shiitake caps fairly large and add the sauce near the end so they brown before becoming wet. This quantity makes a topping or side, rather than a full meal.

Fresh, not dried

Dried shiitake need rehydration and a different approach. Do not substitute their dry weight directly.

Rubbery texture

Overcooking can dry the caps. Start checking early and remove pieces as they finish.

Button mushroom swap

Use similarly sized halves. They may release more liquid, so leave room and check texture rather than relying only on the timer.

Can I eat the stems?

Shiitake stems can be tough. Trim them for this recipe; they can be used separately to flavor stock.

Leftovers & food safety

Refrigerate leftovers promptly in shallow containers. Do not leave cooked food at room temperature for more than 2 hours, or 1 hour above 90°F / 32°C. Reheat leftovers to 165°F / 74°C. Follow package instructions and use a thermometer where appropriate. USDA leftover guidance.
