Method
- Read both packages first. Use potstickers labeled fully cooked and follow any required appliance or temperature directions. This recipe does not cover raw-filled dumplings. Fit the crisper plate as directed and preheat the empty air fryer to 375°F / 190°C if your manual recommends preheating. Keep the potstickers frozen until the basket is ready.
- Mix the soy sauce and rice vinegar in a clean dipping bowl. Brush the frozen potstickers lightly on both sides with the neutral oil, including the pleated edge. Do not use an aerosol spray unless the air fryer maker says it is safe for the basket coating.
- Arrange the potstickers flat-side down in one layer with about ½ inch / 1 cm between them. Do not overlap or stand them in a tight row. If ten do not fit without crowding, cook two batches and keep the second batch frozen.
- Air fry for 5 minutes. Turn each potsticker with silicone-tipped tongs, then cook for another 3 minutes. Check one from the center of the basket: the wrapper should have golden patches and crisp edges, and the filling should be steaming hot throughout.
- Continue in 1-minute increments as needed, usually 8–11 minutes total, until the package requirements are met. If the pleats darken before the center is hot, reduce the temperature to 350°F / 175°C and finish gently. Rest for 2 minutes, then serve with the soy-vinegar sauce. A second batch adds another 8–11 minutes.

Cooking notes & substitutions
Air frying gives frozen potstickers crisp, blistered wrappers rather than the tender steamed top of the usual pan method. This method is intentionally limited to packages labeled fully cooked and suitable for oven-style reheating; raw-filled dumplings need their own package method. A thin coat of oil on both faces and a little space between pieces help the pleats brown without turning hard. The method has been reviewed for cooking logic but has not been kitchen-tested.

Fully cooked only
Read the front and cooking panel, not just the product name. If the package says raw, cook thoroughly using its validated directions and the safe temperature for its filling; do not use this generic timing. Different wrappers and fillings heat at different rates.
Crisp, not pan-steamed
An air fryer dries both sides. Expect a crunchy pleated edge and a crisp bottom, not the tender top created by adding water to a covered skillet. If you prefer that contrast, use the package’s pan-steam method instead. Do not pour water into the fryer basket.
Why did the wrappers turn hard?
Bare wrapper dries before it browns. Brush a thin, even film of oil over both faces, check at 8 minutes and stop once the center is hot and the wrapper is crisp. Extra cooking cannot soften an over-dried edge.
Pale patches or uneven browning
Crowding blocks airflow, while very different sizes finish at different times. Leave gaps, turn every piece and remove smaller potstickers when ready. A light golden surface is enough; do not keep cooking solely for darker color.
Sauce substitutions
Tamari can replace soy sauce one-for-one; use certified gluten-free products if needed and check the potsticker wrapper and filling labels. Lemon juice can replace the rice vinegar one-for-one. These are suggested swaps, not kitchen-tested variations.
Storage and reheating
For the best wrapper texture, cook only what you plan to eat. Refrigerate leftovers promptly in a shallow covered container and use within 3–4 days. Reheat at 350°F / 175°C in short intervals until the centers reach 165°F / 74°C; follow the package when it is stricter.

Can I air fry frozen pork or chicken potstickers?
Only when the package says they are fully cooked and permits a suitable reheating method. Use the package temperature and timing when provided. Raw-filled meat or poultry dumplings are outside this recipe; cook them by validated package directions and verify the safe temperature for the filling.
Leftovers & food safety
Refrigerate leftovers promptly in shallow containers. Do not leave cooked food at room temperature for more than 2 hours, or 1 hour above 90°F / 32°C. Reheat leftovers to 165°F / 74°C. Follow package instructions and use a thermometer where appropriate. USDA leftover guidance.
