## Steel-cut oatmeal in a rice cooker

Prep: 5 min
Cook / rest: 65 min
Total: 70 min
Serves: 3

### Ingredients

- ¾ standard US cup (about 120 g) dry steel-cut oats; not rolled, quick-cooking or instant oats
- 1⅞ standard US cups (450 ml) water
- ¼ teaspoon fine salt
- ½ standard US cup (120 ml) dairy milk or unsweetened plant milk, added after cooking
- 1 tablespoon pure maple syrup
- ½ teaspoon ground cinnamon

Use the listed quantities. Rice-cooker cups are 180 ml; Spoon measurements are standard measuring spoons.

### Method

1. Read the rice cooker manual before measuring. Continue only if it expressly permits steel-cut oats and names a steel-cut-oatmeal or suitable porridge program. Check that this batch is between the listed minimum and maximum. Do not use a generic white-rice, mixed-rice, quick-cook or basic one-switch cycle.
2. Measure the oats and water with a standard 240 ml US cup. Add the steel-cut oats, water and salt to a clean inner pot. Do not rinse the oats, add milk, grease the pot, or include maple syrup during cooking unless your own manual explicitly directs otherwise.
3. Fit the clean inner lid and steam vent exactly as the appliance manual shows. Select STEEL CUT OATMEAL. If your cooker instead permits oats on a porridge setting, use its model-specific quantity and water line rather than assuming this ratio applies. Start the cycle and stay nearby the first time you make the recipe.
4. Let the program finish without opening the lid. On the Zojirushi NL-BAC05, the documented steel-cut-oatmeal cycle is approximately 53–59 minutes. Stop the machine and follow its safety instructions if foam or liquid reaches the steam vent; keep your face and hands away from escaping steam.
5. When the cycle ends, open the lid away from your face and stir from the bottom. The oats should be tender with distinct chewy pieces and loose enough to flow slowly from the spoon. Stir in the milk, maple syrup and cinnamon, then rest uncovered for 3–5 minutes to thicken. Serve promptly; do not use Keep Warm unless the manual permits it for oatmeal.

## Equipment that helps

A rice cooker whose manual specifically permits steel-cut oatmeal, its supplied 180 ml rice cup or a standard 240 ml US measuring cup, measuring spoons and a non-scratching rice paddle or silicone spoon.

The [Zojirushi NL-BAC05 3-cup rice cooker](https://www.amazon.com/dp/B0711FMN8M?tag=aeomantis-20) Sponsored is a useful fit because its dedicated steel-cut-oatmeal program and documented 0.5–1.5 supplied-cup range remove guesswork from this method. It is a compact 3-cup, 120-volt US model, so it is not a universal choice for larger batches or other electrical markets. A cooker you already own is sufficient only when its manual expressly permits steel-cut oatmeal and gives a matching water line or ratio.

## Cooking notes & substitutions

For steel-cut oatmeal in a rice cooker, use a program the manufacturer specifically approves for steel-cut oats, cook ¾ standard US cup oats with 1⅞ standard US cups water, and add milk only after the cycle. This measured batch is based on the documented Zojirushi NL-BAC05 method; do not transfer it to a basic white-rice cycle or one-switch cooker, where oats can foam into the vent. The method has been reviewed against manufacturer guidance but has not been kitchen-tested.

### Prevent boil-over

The wrong program, too much oats or liquid, milk added before cooking, or a blocked steam vent can push foam upward. Use only the manual-approved oatmeal quantity and setting, keep the vent clean, and leave milk and sweetener until after the cycle. If your cooker has no approved oatmeal method, make steel-cut oats on the stovetop instead.

### Adjust the finished texture

For thinner oatmeal, stir in hot water or milk 1 tablespoon at a time after cooking. For thicker oatmeal, let it stand another 2–3 minutes. Change the finished bowl, not the cooking liquid, until you have checked how your specific cooker handles the documented batch.

### Do not swap the oat type

Rolled, quick-cooking and instant oats hydrate and foam differently. They are not one-for-one substitutions for steel-cut oats in this ratio or program. Follow a separate model-specific method if your manual supports them.

### Dairy-free option

Unsweetened oat, soy or almond milk can replace dairy milk after cooking. The flavor and final thickness will vary. These are suggested finishing substitutions, not kitchen-tested variations.

### Delayed start

Do not put dairy milk in a delayed-start cooker. Use a timer only when the appliance manual specifically permits steel-cut oats on that program, and add all milk and sweetener after cooking.

### Storage and reheating

Cool leftovers promptly in shallow covered containers and refrigerate at 40°F / 4°C or colder for 3–4 days. Reheat only the portion needed with a splash of water or milk until it reaches 165°F / 74°C throughout. The oatmeal thickens in the refrigerator, so loosen it after reheating as needed.

## Questions before you cook

### Can I use rolled oats in this rice cooker recipe?

No. Rolled oats absorb water and foam differently, so this steel-cut-oat ratio and program should not be reused. Follow a rolled-oat method specifically approved for your cooker, or cook them on the stovetop.

## Leftovers & food safety

Refrigerate leftovers promptly in shallow containers. Do not leave cooked food at room temperature for more than 2 hours, or 1 hour above 90°F / 32°C. Reheat leftovers to 165°F / 74°C. Follow package instructions and use a thermometer where appropriate.
